How do I make it?
  1. Heat a large saucepan adding oil, leeks and garlic over medium heat. Season.
  2. Cook the leeks until clear, adding peas and stock.
  3. Bring mixture to the boil and reduce the heat to low to simmer for 30 minutes.
  4. With 10 minutes remaining, toast bread.

Serve soup into bowls with chopped parsley and bread.
