Salmon, Coriander & Lime Spaghetti

What do I need?
400 g Spaghetti
0.3 cup Extra Virgin Olive Oil
300 g Salmon Fillet
2 tbsp Fresh Chives
(Chopped)
2 tbsp Fresh Coriander
(Chopped)
2 tsp Fresh Parsley
(Chopped)
150 g Capers
(Rinsed)
2 tsp Lime
(Grated rind)
0.3 cup Lime Juice
How do I make it?
  1. Cook dried spaghetti in a saucepan of boiling water according to packet instructions or until al dente.
  2. Meanwhile, heat 1 tbs olive oil in a non-stick frying pan over a medium-high heat.
  3. Add salmon fillets and cook for approximately 4-5 minutes each side or until they are cooked through.
  4. Transfer to a plate and cover with foil to keep warm.
  5. Chop chives, coriander and continental parsley.
  6. Combine with drained capers.
  7. Add grated lime rind, fresh lime juice and remaining olive oil. Season.
  8. Break salmon into flakes and toss through pasta.
