400 g Udon Noodles
2 tbsp Sweet Chilli Sauce
2 tbsp Hoisin Sauce
2 tbsp Soy Sauce
2 tbsp Extra Virgin Olive Oil
4 Chicken Breasts
(Sliced thinly)
1 Red Capsicum
(Sliced thinly)
1 Zucchini
(Sliced thinly)
150 g Snowpeas
(Top and tailed, sliced)
4 Spring Onions
(Sliced thinly)
How do I make it?
  1. Into a large bowl, place noodles and boiling water to cover, soaking for 5 minutes.
  2. Combine sweet chilli, hoisin and soy sauces.
  3. Heat a fry pan over medium heat, adding oil.
  4. Brown chicken slices for approximately 8 minutes. Remove.
  5. Add vegetables to the fry pan, stirring and cooking for 3 minutes.
  6. Place remaining ingredients into the pan, and heat for 4 further minutes.

Serve warm.
