4 Pork Cutlets
4 Gourmet Tomatos
(Chopped)
200 g Kent Pumpkin
(Diced)
1 Onion
(Diced)
1 Red Capsicum
(Sliced)
6 Garlic Cloves
(Minced)
⅓ cup Fresh Parsley
(Chopped)
1 tbsp Mixed Spice
½ tsp Paprika
½ tsp Salt
¾ cup Water
2 tbsp Extra Virgin Olive Oil
2 cup Mozzarella Cheese
(Grated)
2 tbsp Parmesan Cheese
How do I make it?
  1. Preheat oven to 180 degrees.
  2. Spread pumpkin in baking pan and place chops on top. Season.
  3. Chop tomatoes, peel onions and slice capsicum, placing on top of chops.
  4. Mix water, oil, garlic, seasonings and herbs together.
  5. Pour over top of chops.
  6. Bake for 35 minutes.
  7. Put cheese on top and bake another 5 minutes or until pork is cooked and cheese is melted.

Serve warm and with a simple side salad.
