What do I need?
4 Lamb Fillets
1 tbsp Sesame Oil
1 Red Onion
(Finely sliced)
2 Mangos
(Flesh cut from stone)
250 g Cherry Tomatoes
(Halved)
100 g Baby Spinach Leaves
(Chopped)
1 cup Fresh Coriander
(Chopped)
¼ cup Sweet Chilli Sauce
1 tbsp Rice Vinegar
1 Lime
(Quartered)
100 g Snowpeas
(Top and tailed, sliced finely)
How do I make it?
  1. Heat a pan over medium or BBQ grill.
  2. Brush lamb with oil and cook for 6 minutes either side or until desired.
  3. Combine sliced onion, mango, spinach, tomato, coriander and snowpeas in a serving bowl.
  4. Slice the lamb and add to bowl.
  5. Combine sweet chilli sauce and vinegar.

Serve salad with dressing and lime wedge.
