Very well received by my family, easy to prepare. I used sliced carrot instead of snowpeas. Probably not as nice, but did the job.

This recipe is fantastic! my family wanted it three times in the first week.
I made a couple of variations, used very thin slices from a half leg of lamb, and fried them in minimal oil and then placed the slices on top of a mound of salad on each plate; I used rice wine vinegar for a more delicate flavour. I also used white truffle oil on one occasion to fry the lamb (a new shop opened near us so I just had to try it) and I believe it helped the flavour. Just a very very tasty recipe and I'll use it again and again. I've never seen snow peas used this way and they are sweet and crunchy.

Baby Spinach Leaves
Delicious in salads when raw, cooked spinach is a quick and simple side dish.
When buying fresh spinach look for:
> Leaves that are crisp and dark green.
> Avoid leaves with yellow spots or ones that feel slimy.
> Wilted leaves have already passed their prime.
To store your spinach make sure you:
> Store it in a plastic bag in the fridge.
> Do not wash spinach leaves before storing
> Spinach can keep for three to four days.

Your garden-variety spinach, this is a good all rounder and can be added to salads as well as cooked. > Flat
Smooth leaves makes this variety of spinach easier to clean, it’s often used in canned and frozen spinach. > Semi-Savoy
A hybrid variety, Semi-Savoy has the same texture and flavour as Savoy but the leaves are smoother.
Snowpeas
A great addition to salads, often steamed or stir-fried. Top and tail these crisp beans and remove the string down their inner side.
