400 g Potato
(Washed)
2 Garlic Cloves
(Crushed)
70 g Bacon
250 g Corn Kernels
100 g Button Mushrooms
330 mL Sour Cream
1 cup Tasty Cheese
(Grated)
1½ tbsp Butter
½ cup Fresh Parsley
(Chopped)
How do I make it?
Preheat oven to 180C.
Scrub potatoes until clean.
Pierce a couple of times with a sharp knife and microwave for 10 minutes or boil in steamer.
Spray with cooking spray and place into oven, turning regularly during the 45 min cooking time to endure brown on all sides.
Slice bacon, mushrooms, onion and garlic clove and pan fry over medium heat until cooked. Set aside and keep warm.
When potatoes are done, slice a
Mash lightly with butter and place half back inside.
Top with a few spoonfuls of the bacon / vegetable mix including corn.
Top with grated cheese, a dollop of sour cream and chopped parsley to serve.
