4 Chicken Breasts
250 g Cherry Tomatoes
(Halved)
100 g Kalamata Olives
(Pitts removed)
½ cup Fresh Basil
2 tbsp Extra Virgin Olive Oil
1 tbsp Balsamic Vinegar
200 g Salad Mix Lettuce
How do I make it?
  1. Preheat oven to 200C.
  2. Onto baking tray, place chicken breasts, tomatoes, olives and drizzle with half the oil.
  3. Season and bake for 20 minutes. Check to ensure chicken is baked through!
  4. Remove from oven and arrange on serving plates.
  5. Combine vinegar, lettuce and basil for side salad.
Serve breast with juices and salad.
