8 Lamb Cutlets
2 tbsp Fresh Oregano
(Chopped)
4 tbsp Extra Virgin Olive Oil
400 g Cherry Tomatoes
(Halved)
1 cup Mozzarella Cheese
(Cubed)
2 Zucchinis
(Slices 1cm thick)
2 tbsp Red Wine Vinegar
1 tsp Wholegrain Mustard
3 tbsp Fresh Basil
(Leaves picked)
How do I make it?
  1. Combine 3 tbsp oil, vinegar and mustard in a bowl. Season and set aside.
  2. In large salad bowl, combine tomatoes, cheese, zucchini, and basil.
  3. Brush chops with 1 tbsp of oil and season with salt, pepper and oregano.
  4. Grill or pan fry over high heat for 4 minutes each side for medium rare, or until cooked as desired.
  5. Combine salad and mustard dressing.

Serve chops with tomato salad.
