8 Lamb Cutlets
3 tbsp Extra Virgin Olive Oil
2 Garlic Cloves
(Crushed)
1 Orange
(Cubed)
100 g Potato
(Peeled, diced)
400 g Canned Cannellini Beans
(Washed)
¼ cup Milk
2 tbsp Fresh Basil
(Chopped)
1 cup Orange Juice
¼ cup White Wine
2 tsp Brown Sugar
How do I make it?
  1. For the mash:
  2. Boil potatoes in salted water for 10 minutes.
  3. Add beans and boil until potato and beans are tender. Drain.
  4. Transfer to a food processor adding milk gradually. Season.
  5. For the lamb:
  6. Brush cutlets with 2 tablespoons olive oil.
  7. Season with salt, pepper & garlic.
  8. Heat 1 tablespoon olive oil in a pan over medium heat adding the lamb.
  9. Cook for 5 minutes either side or until desired. Rest for 2 minutes.
  10. For the dressing:
  11. Combine orange juice, cubed orange, wine and sugar in the pan used for the lamb and bring to a simmer.
  12. Cook until thickened to a sauce, about 8-10 minutes.
