4 tbsp Fresh Thyme
(Chopped)

How do I make it?
  1. Preheat oven to 180C.
  2. Place tomatoes on a tray with garlic and thyme and roast in oven for 10 minutes.
  3. In a heavy-based pot cook onion until soft.
  4. Add tomatoes to pot with stock and basil and bring to boil.
  5. Reduce heat and simmer for 30 minutes.
  6. Blitz the soup with a food processor or blender, checking for seasoning.

Serve with toasted bread stick.
