I really liked it and the rest of my family just thought it was okay but with a LOT less sugar it would be perfect. I ended up just adding some more salsa to try and make it less sweet and it helped a little. this is very good served over white rice to sop up all that sauce =) I will definitely make this again soon it's so quick and easy.

I'm the guy that sent this recipe in. Good to see we have a few converts. Made it the other night and realized I didn't have enough Dijon Mustard so I used what I had, which was a bit of French Mustard and a bit of wholegrain mustard along with the Dijon. I too cut back on the sugar as Osbeck below suggested and added some chopped green capsicum to the mix. Very happy with the result to say I'll make it that way again.

We really enjoyed this too.. My casserole dish was overflowing, so when cooked, I placed it over cooked rice in a baking dish, sprinkled some cheese on it, and baked it until the cheese was nicely melted. The family loved it!

It was so quick to make, I could do it ahead of time (gotta love that) AND the kids loved it.
Alterations: * I cut back the sugar by 1/3 and next time will cut it even further back
* plus I used chicken thigh fillets (cheaper)
