4 Lamb Backstraps
2 tbsp Extra Virgin Olive Oil
2 tbsp Fresh Thyme
(Chopped)
2 Garlic Cloves
(Crushed)
400 g Baby Spinach Leaves
1 tbsp Lemon Rind
1 tbsp Lemon Juice
500 g Haloumi Cheese
(Sliced)
1 Lemon
How do I make it?
  1. Heat a non-stick pan over high.
  2. Combine lamb, oil, thyme and seasoning.
  3. Cook lamb and marinade in pan for 4 minutes each side. Remove to rest.
  4. Add garlic to pan, as well as spinach and lemon zest until spinach begins to wilt. Remove.
  5. Cook haloumi slices in the pan with lemon juice for 2 minutes each side.

Slice lamb into thin slices & serve.
