We just used lamb chops as couldn't get the backstrap. Delicious recipe...great combinations of wonderful flavours. And my 4 year old loved the spinach!

We used venison backstraps instead of lamb, and it was really nice. Have more haloumi in fridge for next time - yum!

A semi-firm sheep’s milk with a rubbery texture when grilled. Fantastic when grilled and added to salads. Made famous by the Greeks.
