What do I need?
800 g Fresh Blue Eye
200 g Rice Noodles
2 Cucumbers
165 mL Coconut Milk
2 tbsp Fish Sauce
1 tbsp Lime Juice
1 tsp White Sugar
2 Fresh Red Chillis
(Sliced, Seeded)
1 tbsp Fresh Ginger
(Grated)
3 tbsp Fresh Coriander
(Chopped)
20 mL Extra Virgin Olive Oil
How do I make it?
  1. Cover noodles with boiling water in a large bowl for 15 minutes.
  2. Slice cucumbers thinly into sticks.
  3. Combine coconut milk, fish sauce, lime, sugar, chilli, ginger, coriander and cucumber.
  4. Add noodles and combine together. Set aside.
  5. Heat oil on grill / pan over medium heat, season fish and sear either side for 3 minutes.
  6. Serve.
