1 kg Swiss Brown Mushroom
(Sliced)
2 Garlic Cloves
(Crushed)
1 tbsp Butter
1 tbsp Extra Virgin Olive Oil
1 Onion
(Chopped)
2 tbsp Fresh Thyme
(Chopped)
2 tbsp Tomato Paste
4 cup Vegetable Stock
2 tbsp Sour Cream
2 tbsp Fresh Parsley
(Chopped)
How do I make it?
  1. Into a deep pot heat butter and oil over medium heat.
  2. Sauté onion until golden brown.
  3. Wash and peel mushrooms if nessecary, slice finely.
  4. Add mushrooms to pot with garlic and thyme, browning for a further 5 minutes.
  5. Add tomato paste and stock, simmering for 20 minutes.

Serve with a dollop of cream, sprinkle of chopped parsley and season.
