Delicious combination of ingredients. However, I found the ricotta a little hard to spread over the lasagna sheets (Though I used dry sheets not fresh ones) Also the top came out dry.
Will try again but maybe use fresh sheets and let the ricotta sit for a bit before trying to spread it. Also may add extra Parmesan and maybe some cheddar cheese to the top of the lasagna.

Best Lasagne I have had in a long time!! I also used 500g of mince. I didn't put in the capsicum purely because i ran out of time, but will use it next time. I also used alot more fresh oregano & basil then was suggested in the ingredients.
Will definately make it again! It is now my husbands favorite meal!!!

So much better than the usual. The zucchini, capsicum and spinach were delicious in it. I cooked a large one with 900gr mince it served 8 people. Plus I added a whole tin of diced tomatos and extra spaghetti bolognaise herbs.

I amended the recipe in the following ways, owing to personal taste and supplies:
Doubled the mince to 500g, omitted the zucchini and capsicum, used 40g of fresh baby spinach, and used a tomato passata instead of bolognaise with plenty of salt and pepper. Calorie wise, my variation came out to about 2000 calories for a "4 serve" version. Big serves though.
I also baked it for an extra 10mins before uncovering it.
Not the cheesy, saucy version most commonly available, but the fresh herbs and ricotta make this an exceptionally tasty dish.
